  • 2008 Cabernet Franc

Among the oldest vines on the property, our focus is in the vineyard while inside the winery the goal is to respect the natural character for the grape. Intensive hand work to select shoots, remove leaves throughout the summer exposing clusters to just the right amount of sunlight, and thinning under ripe fruit before harvest allow us to treat the wine very traditionally. Punching down the tanks four times a day by hand and allowing the fermentation to generate its own heat, the techniques vary little from those performed a hundred years ago. Aged 9 months in barrel and bottled unfiltered, the wine benefits from bottle aging for 3-5 years. Harvested on October 22nd, 2008 and bottled on July 21st, 2009, we produced 193 cases of this vintage.

  • 2010 Meritage

From each lot of our “Bordeaux” varietals (Cabernet Franc, Petit Verdot, and Merlot), we select barrels with high aging potential. Initially these barrels can be muted aromatically and harsh on the palate, but an extra year of aging in barrel slowly allows oxygen to round out the palate and evolve complex aromatics. The percentage of each wine in the blend varies annually in order to produce our goal of an intensely aromatic, complex wine with a long finish. Bottled in January 2011 with a total case production of 200.

  • 2010 Petit Verdot

While we try not to play favorites in the vineyard, Petit Verdot rewards hard work like few other varietals. Often ripening deep into October, we pay close attention to the taste of the skins and seeds in order to optimize the potential flavors in the wine. Once again fruit thinning is important in these generous vines, but care must be taken to balance the crop load because sugars can rise too quickly late in the season. Inside the winery we are careful in extraction: focusing on the early stages of fermentation as the opportunity to build body and gradually reducing the temperature and mixing towards the end in order to find balance from this powerful grape. Deeply colored with dense tannins the wine is expressive of blackberry liqueur and violet. Harvested on September 19th, 2010 and bottled on August 1st, 2011, we produced 202 cases of this vintage.

  • 2011 Touriga

Tavern was the original destination for Touriga Nacional, but continued excellent results in the vineyard led to initial experimentation to create a dry red wine from the grapes. Like Petit Verdot it is rich in tannin and color, but has a distinctive spiciness unlike any of our other wines. It is a rare breed, but one that will continue to be an important part of our stable.
